Over the last 50 years, America has experienced dramatic advances in science and technology in numerous spheres of research and application, including health science and nutrition. Nevertheless, Americans are increasingly less healthy, experiencing unprecedented rises in chronic/not acute, life-threatening illnesses, conditions, and diseases, the overwhelming majority of which are lifestyle belated, and which in large part are a direct result of the relationship that Americans have with food, medicine, and their bodies. Recently, to approach the food related health problems in America, researchers began to focus on the rubric of "obesity". Four years ago the United States Depart of Agriculture (USDA) launched a multi-million dollar research grant project for researchers to develop new ways to combat childhood obesity. Before accepting my appointment and Xiamen University, I lead an interdisciplinary group of nutritionists, health and social scientists in developing an intervention proposal for the USDA program.
