摘 要:本课题旨在调研我院九里校区周边瓜子卫生安全情况。试验中以九里校区周边小摊和超市购买的一种散装白皮瓜子和两种袋装瓜子(洽洽、真心)为检测样品,分别测定了其水分含量、过氧化值和细菌总数,并与国家标准GB/T22165-2008《坚果炒货食品通则》相对比来综合评价三种瓜子的卫生安全情况。通过试验得出:散装白皮瓜子的水分含量、过氧化值、细菌总数含量分别为7.83%、0.26g/100g、1.97×104 cfu/g两种袋装瓜子(洽洽、真心)的三项指标分别为5.92%、5.99%;0.546g/100g 、0.2552 g/100g ;1.32×104cfu/g、0.93×104cfu/g。依据国家标准GB/T22165-2008《坚果炒货食品通则》中的规定,瓜子等炒货应当符合水分含量≤6.5%、过氧化值≤0.25g/100g、细菌总数≤1000cfu/g的要求才属合格产品。因此,与国标对比发现,散装白皮瓜子虽然细菌总数已达国标要求,但水分含量、过氧化值两项均超出国标限值,而两种袋装品牌瓜子各项指标均符合国标要求。 由此可见,该种散装瓜子安全卫生情况不佳,因在储运过程中保存不当,导致瓜子吸潮、水分含量增高,很容易加快微生物繁殖腐败的速度;且该瓜子中的油脂已发生了较大程度的自动氧化反应,可能已产生了大量危害人体健康的化学物质,不宜食用。袋装品牌瓜子品质较好,可放心食用。
